Substituting Milk in baking: Soy, Hazelnut, oat, and almond Milks are thicker than most milk substitutes and are best for baking. Coconut, hemp, cashew, and rice milks are too thin for baking. Recipes that call for buttermilk can be easily replace by taking any milk substitute and adding 1 tablespoon vinegar or lemon juice to whatever the amount of milk it is you need and allowing it to curdle for about 10 minutes. For recipes that call for condensed milk, you can make 2 parts with silken tofu to one part milk substitute and 1 part sugar or other sweetener, just put it in the blender until smooth enough. And last but not least for recipes that call for evaporated milk try replacing it with unsweetened milk substitutes and a thickener like cornstarch, flour, arrowroot powder, and kudzu powder.
